I am nooo food blogger, obviously. Â There are plenty of amazing ones out there, and cooking has never been much of a passion of mine. Â Plus, do you know who my sister is?! Ms. Culinary School herself, Gabby? Â Yeah, so there’s really been no need for me to venture into her domain. Â I know my role.
Until tonight. Â Tonight I borrowed her totes adorable Anthropologie apron (because if I’m going to cook, I’m gonna look cute), put my blackberry down and made a super healthy, and yummy fritatta loaded with veggies for dinner. All by myself. Â My blog is just me…fashion, men, love, my pursuit of happiness and also, being healthy, which has become a huge part of my life as of late. Â I know how to drop weight fast, and subsequently feel like shit in the process. Â I could exist on coffee and a few almonds, but I’m choosing not to do it that way this time. Â I’m also working out so hard that my body needs food-but the right kinds. Â I’m so inspired/supported by blogs like 20somethingcupcakes, (blog/girl crush alert!) and of course everyone at In It To Gym It.
All the working out and eating right is definitely having physical affects, but I’m sleeping better, and you guys know I have the worst insomnia. Â My anxiety is decreasing rapidly. Â I have more energy during the day and a sense of control where I didn’t have it before. Â So while I might go on and on about getting bikini ready, and the photoshoot I have next week, and yay my jeans are baggy-at the end of the day, the mental and emotional reasons are the ones that keep me going.
Bethenny Frankel’s “Naturally Thin” Easy Impressive Frittata (The recipe shown is for 1 person-I was feeding 3, so I kept the egg to yolk ratio and added about 5 cups of veggies. The more the merrier!)
Cooking spray
1 cup vegetables (onions, spinach, zucchini, broccoli, or tomatoes)
1 egg yolk and 3 to 4 egg whites
Salt and pepper, to taste
1 tablespoon crumbled feta or grated Parmesan
Cooking Directions
Preheat oven to 350°F. Spray a small nonstick pan with an ovenproof handle with cooking spray.
Over medium heat, sauté the vegetables.
In a small bowl, whisk together the egg yolk and egg whites with a little salt and pepper.
Pour the egg mixture into the pan and move it around with a spatula until slightly solidified.
Transfer the pan to the oven.
Bake until the frittata is almost firm to the touch (approximately 15 to 20 minutes). Sprinkle with the cheese and bake until firm.
Serve immediately.



Don’t judge my pictures, ya’ll. Tasted way better than it looked, and it was Gabby approved. I’m just stoked I pushed myself to do something different, because chicken breast and broccoli every night was making me incredibly stab stab stabby. Don’t like eggs? Try something else!

sounds great! i typically eat lots of eggs & low fat protein – turkey is good & a lot of veggies & some fruit. but when i cheat, i eat lots of chocolate

I love frittatas though, because they’re virtually foolproof to prepare. And I think at the end of the day, eating healthy and getting a good workout makes you feel so good, you end up being semi-addicted. It does wonders for your skin and metabolism as well!

Yay! Another health junkie, haha. Health and fitness have been a part of my life for as long as I an remember. As an athlete, while in season I train as much three hours a day, so fitness is usually taken care of. It’s the health part I slack off incredibly, especially in season when I’m burning energy so much I just grab whatever I see. But now that the season is over, I’m concentrating more on the health side because I’ve noticed my skin, sleeping habits, and energy levels are HORRIBLE.
I love this fritatta! It looks so delicious, and I actually have the ingredients to make it for my self! Yay!! Good luck with your health & fitness, and definitely post more of those food posts. They look so yummy
I’ve been thinking of picking up Bethenny’s book! I keep hearing rave reviews about it. After seeing your yummy (and “skinny”) frittata, I think I may have to run (not walk) and pick up her book! And by the way, there’s nothing wrong and wanting to share your cooking skillz with the blog world! Anything you touch turns to gold ;o)
I’m working on catching up on your blog since discovering it… this morning. Love it! Especially this post! You sorta skittled over the part where you said that working out and eating right was helping with your insomnia and anxiety, but that really stuck out to me. I don’t consider myself an anxious person but I used to get horrible anxiety attacks that would keep me up at night. Being healthier has certainly helped mostly because I think it’s rustled up some self esteem for me. At the root of my anxiety (I think) is a girl who’s not comfortable in her own skin, but the little accomplishments that have come from lifestyle changes have helped immensely. Seeing that other people are going through the same thing is just great.
I look forward to reading more of your blog!

I am so happy to hear that you are losing weight the RIGHT way! (When it’s done the wrong way… it never stays off anyway.) The problem with me and eating healthy is that I am the WORLD’S PICKIEST EATER [seriously] so I have to stick with some piece of grilled meat [i.e., chicken or salmon] with some veggies on the side. I don’t do those big mixes of crap. I hope you enjoyed your dinner!! [but it just doesn't look like my thing... lol]

Um, that looks amazeballs and I just ate, but want to do it again….right now!
